To make paneer tikka sub sandwich, make the paneer tikka filling first. Combine the curds, besan, chilli powder, ginger-garlic paste, dried fenugreek leaves, garam masala and salt in a deep bowl and mix well. Add the paneer and mix gently. Keep aside to marinate for 15 minutes. Heat the oil in a broad non-stick pan, add the marinated paneer, mix gently and cook on a slow flame for 5 minutes, while stirring continuously. Keep aside to cool completely. Divide the filling into 3 equal portions and keep aside. Next assemble the sandwich. Place the French breads on a clean, dry surface and cut each bread horizontally into two. Place two cheese halves on each of the upper half of the breads. Place the bread halves on a baking tray and bake in a pre-heated oven at 200°c (400°f) for 5 minutes. Keep aside. Place the lower half of a bread on a clean, dry surface and spread ¼ cup lettuce evenly over it. Place all the veggies and spread all the sauce evenly over it. Sandwich it with the upper half of the French bread with the cheese side facing downwards and press it lightly. Serve immediately.

  5. Place 3 tomato slices, 3 cucumber slices, 3 onion slices and 2 capsicum rings evenly over it.
  6. Spread a portion of the paneer tikka filling evenly over it.
  7. Spread 1 tbsp black olives and 8 jalapenos evenly over it.
  8. Spread 2 tbsp mayonnaise, 2 tsp chilli sauce and 1 tsp mustard sauce evenly over it.
  9. Sandwich it with the upper half of the french bread with the cheese side facing downwards and press it lightly.
  10. Repeat steps 4 to 9 to make 2 more sub sandwiches.
  11. Serve the paneer tikka sub sandwich immediately.

For the paneer tikka filling

  1. To make paneer tikka sub sandwich filling, add thick curd in a deep bowl. Hung curd would best as it coats the paneer very well. 
  2. Add ginger-garlic paste. This lends a very good flavour to the marinade of paneer tikka filling. 
  3. Add chilli powder. This is for colour and spice both. 
  4. Add dried fenugreek leaves, also called as Kasur methi. You can dry roast it on a slow flame for 15 seconds and then crush it with your fingers and add it. 
  5. Add the garam masala. You can add tandoori masala as a substitute to garam masala.
  6. Add 1 tbsp of besan. This helps in thickening curd. In simple terms it acts as a binding agent. 
  7. Add oil. gives the flavor to paneer tikka and makes it luscious.
  8. Add salt as per taste. 
  9. Mix well using a spoon to make the marinade of paneer tikka filling.
  10. Add the paneer cubes. Cut them into 1” x 1” cubes preferably. 
  11. Toss it gently till the marinade coats the paneer cubes well. Keep aside to marinate for 15 minutes. This is for all the flavours to blend well. 
  12. Next, heat the oil in a broad non-stick pan. 
  13. Add the marinated paneer. 
  14. Mix gently using a wooden ladle, taking care that the paneer pieces do not break.
  15. Cook the paneer tikka filling on a slow flame for 5 minutes, while stirring continuously but gently. The oil will help the marinade cook and avoid the paneer from sticking to the pan. Ensure to cook on a slow flame. If cooked on a high flame, there are high chances that the curd might curdle. 
  16. Keep aside to cool completely. It will also thicken slightly during this time. 
  17. Divide the filling into 3 equal portions and keep aside.

  2. Cut it into half from the centre. Use a sharp bread knife for a clean cut. 
  3. Place two cheese halves on the upper half of the bread.

  15. For added flavour, add 1 tsp of mustard sauce evenly over it. Mustard sauce is slightly pungent, so add as per your liking. You can even add Southwest sauce if you wish to. 
  16. Sandwich it with the upper half of the French bread with the cheese side facing downwards and press it lightly.

What a subway sandwich!!! This was just suupperb!!! I would anydaymake it at home if i would feel like having a sub.. The taste of paneer in the sandwich is so yumm.. I added many more sauces to my sub and it was a complete meal!!
