To make chutney sandwich, first make the sandwich. Combine the coriander, spinach, bread slice, green chillies, lemon juice and salt in a mixer jar and blend along with 2½ tbsp water into a smooth paste. Keep aside. Then assemble the sandwich. Place 2 bread slices on a clean, dry surface, spread ½ tsp of butter on each bread slice and spread it evenly. Spread ½ tsp of green chutney on each bread slice and spread it evenly. Sprinkle a little chaat masala evenly over both the buttered-chutney bread slices, finally cover with a buttered-chutney side facing downwards and press it lightly. Repeat steps 1 and 2 to make 9 more sandwiches. Cut each sandwich diagonally into 2 portions and serve.

For preparing the spicy Green Chutney For Sandwich, first wash and clean the coriander leaves. Dhania is widely used in Indian cuisine and also consists of many health benefits. You can read about the health facts of corainder leaves.

Roughly Chop the coriander leaves, measure ½ cup and keep aside. You can make use of tender stalks of coriander too.

Similarly, clean and wash palak bunch. Remove the thick stem.

Chop the spinach leaves, measure 2 tbsp and keep aside. Though added in such less quantity, the palak patta enhances the green colour and adds a volume to the Sandwich Green Chutney.

Torn one bread slice into pieces and keep aside. We have used white bread slice but, you can also use brown bread slice or just the bread crust trimmings. Freshly grated coconut can also be used as a substitute. Overall, this addition makes the sandwich chutney thick and creamy.

Roughly chop the green chillies. You can increase or decrease the quantity as per the spice level you can handle.
