To make the gravy for Punjabi paneer pasanda, combine the onions and little salt in a deep bowl and mix well. Cover with a lid and keep aside for 10 minutes. Heat the oil for deep-frying in a deep non-stick pan, add the onions and deep-fry till they turn golden brown in colour. Drain on an absorbent paper. Blend the deep-fried onions in a mixer till smooth. Keep aside. Heat the oil in a deep non-stick pan, add the onion paste and cook on a medium flame for 2 minutes, while stirring occasionally. Add the chilli powder and garam masala, mix well and cook again for 1 minute. Add the curds, mix well and cook on a slow flame for 1 minute, while stirring continuously. Add the deep-fried onion paste, salt and ½ cup of water, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.

To make paneer pasanda, just before serving, place the paneer cubes in the gravy, mix gently and cook on a medium flame for 1 to 2 minutes. Serve the paneer pasanda hot garnished with coriander.

Ingredients

For Paneer Pasanda
1 1/4 cups paneer (cottage cheese) cubes

For The Gravy
1 cup sliced onions
oil for deep-frying
2 tbsp oil
1 tsp chilli powder
1/2 tsp garam masala
3/4 cup fresh thick curd (dahi) , whisked
salt to taste

For The Onion Paste
1 cup roughly chopped onions
5 garlic (lehsun) cloves
1 tsp roughly chopped ginger (adrak)
2 tbsp cashew nuts (kaju)

For The Garnish
2 tbsp finely chopped coriander (dhania)

  1. Combine all the ingredients in a broad non-stick pan along with 1 cup of water and boil for 8 minutes.
  2. Cool and blend in a mixer to a smooth paste. Keep aside.

  1. Just before serving, place the paneer cubes in the gravy, mix gently and cook on a medium flame for 1 to 2 minutes.
  2. Serve paneer pasanda hot garnished with coriander.

for onion paste for Paneer Pasanda

  1. To make the Onion Paste for Paneer Pasanda, heat a broad non-stick pan and add the onions to it.
  2. Add the garlic. Use nice fresh garlic cloves for best flavour. To peel the garlic use a sharp knife.
  3. Add the ginger. Peel the ginger using a sharp knife and then chop it.
  4. Add the cashew nuts. This is added in mostly all Indian curries as it gives thickness to the gravy and also creaminess.
  5. Add 1 cup of water.
  6. Mix it well.
  7. Cook it on a medium flame for 10 minutes. Stir it in between. This boiling for a long times gives a very nice flavour to the Paneer Pasanda.
  8. Cool completely.
  9. Transfer the mixture into a small mixer jar. Always use a small mixer as it will blend well and faster.
  10. Blend it till smooth. Keep aside.

  1. To make the fried onions, place the onions in a deep bowl, sprinkle salt over them and slowly massage the onions with your hands.
  2. Keep aside for 10 minutes.
  3. Squeeze out the excess water.
  4. Heat the oil in a deep non-stick pan and deep fry a few onions at a time on a medium flame.
  5. Drain the fried onions on an absorbent paper. Keep aside.
  6. Add the onions to a blender jar.
  7. Blend the deep-fried onions in a mixer till smooth. Keep aside. This is the deep-fried onion paste. 
  8. Heat the oil in a broad non-stick pan.
  9. Add the onion paste which we had prepared earlier.
  10. Mix it well.
  11. Cook on a medium flame for 2 minutes, while stirring in between.
  12. Add the chilli powder. This will give good spice to this gravy.
  13. Add the garam masala. A must ingredient in any North Indian gravy. Garam masala is easily available in all super markets but you can also make it at home using our recipe.
  14. Mix well.
  15. Cook on a medium flame for 1 minute.
  16. Add the curd, this is added to add little creaminess to this Paneer Pasanda recipe. Make sure before you add the curd it is whisked well using a whisk.
  17. Mix well and cook on a slow flame for 1 minute, while stirring continuously. If the flame is to high the curds will curdle so make sure you lower the flame.
  18. Add the deep-fried onion paste.
  19. Add the salt and ½ cup of water. Water is added to adjust the consistency of the gravy.
  20. Mix well and cook on a medium flame for 2 minutes, while stirring in between.

  1. Just before serving the Paneer Pasanda recipe, re-heat the gravy for 2 to 3 minutes.
  2. Add the paneer cubes. This can be bought readymade or made at home using our recipe.
  3. Mix Paneer Pasanda gently and cook on a medium flame for 1 to 2 minutes. Do not mix the paneer cubes a lot as they will break.
  4. Serve this Paneer Pasanda hot garnished with coriander.
