chana paneer is a North Indian delicacies This is a spicy and delicious Punjabi curry made with paneer, white chickpeas, aromatics, tomatoes, herbs and spices. You can also add tofu instead of paneer to make sabzi more healthier. Fresh cream and kasuri methi gives the extra flavour to this chole paneer masala.
chana masala with paneer has a perfect tanginess, spiciness to the gravy which compliments well with chole and paneer to make it a healthy sabzi. This dhaba-style chole paneer masala also makes this filling and healthy curry and serve with phulka, paratha, rice, jeera rice or tandoori roti for a satisfying meal.
Tips to make chana paneer: 1. Instead of paneer you can also add tofu to make it more healthier. 2. You may also use masala paneer or make homemade paneer. 3. Make sure to gently mix the gravy after adding paneer cubes.

For cooking chana- In a pressure cooker, add soaked and drained kabuli chana.
- Add cloves, cinnamon, cardamom, salt and 2 cups of water, mix well and pressure cook for 4 whistles.
- Allow the steam to escape before opening the lid. Keep aside.
How to proceed- To make chana paneer, combine the tomatoes and dry red chillies in a mixer and blend till smooth. Keep aside.
- In a deep pan, add oil and when hot add the cumin seeds.
- When the seeds crackle, add the ginger-garlic paste and sauté on a medium flame for 1 minute.
- Add the onions and sauté on a medium flame for 2 minutes.
- Add the tomato- red chilli pulp, chilli powder, kashmiri red chilli powder, turmeric powder, coriander powder, cumin seeds powder, chole masala and salt, mix well and cook on a medium flame for 4 to 5 minutes, while stirring occasionally.
- Add the cooked kabuli chana, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
- Add the dry fenugreek leaves, fresh cream and coriander and mix well.
- Add the paneer pieces, mix gently and cover with a lid and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Serve the chana paneer hot with butter naan or jeera rice.

For kabuli chana: 1 cup kabuli chana, soaked for 8 hours, 2 cups paneer cubes, 1 small stick cinnamon, 3 cloves, 2 cardamom and Salt to taste. See the below image of list of ingredients for chole paneer.

For chole paneer: 2 cups roughly chopped tomatoes, 2 whole dry red chillies, broken into pieces, 3 tbsp oil, 1 tsp cumin seeds, 1 tbsp ginger-garlic paste, 1 cup chopped onions, 1½ tsp chilli powder, 1 tsp Kashmiri chilli powder, ½ tsp turmeric powder, 1 tsp coriander powder, 1 tsp cumin seeds powder, 2 tsp chole masala, 1 tsp dry kasturi methi, 2 tbsp fresh cream and ¼ cup finely chopped coriander. Add 3 cloves (laung / lavang).

Add 1 small stick cinnamon (dalchini).

Add 2 cardamoms (elaichi).

Add salt to taste.

Add 2 cups of water.

Mix well and pressure cook for 4 whistles. This is how it looks after cooking.

In a mixer, add 2 cups roughly chopped tomatoes.

Add 2 whole dry kashmiri red chillies.

Blend till smooth. Keep aside.

In a deep pan, add 3 tbsp oil.

When hot add 1 tsp cumin seeds (jeera).

When the seeds crackle, add 1 tbsp ginger-garlic (adrak-lehsun) paste.

Sauté on a medium flame for 1 minute.

Add 1 cup chopped onions.

Add 1 1/2 tsp chilli powder.

Add 1 tsp kashmiri red chilli powder.

Add ½ tsp turmeric powder (haldi).

Add 1 tsp coriander (dhania) powder.

Add 1 tsp cumin seeds (jeera) powder.

Add 2 tsp chole masala.

Add salt to taste. Use 1/4 tsp of salt for high blood pressure patients.

Mix well and cook on a medium flame for 4 to 5 minutes, while stirring occasionally.

Add the cooked kabuli chana.

Add 1 tsp dried fenugreek leaves (kasuri methi).

Mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
