For the sugar syrup- To make instant jalebi, combine the sugar along with 1 cup of water, cardamom powder and orange food colour.
- Simmer on medium flame for 5 minutes till the syrup is of 1 string consistency.
- Remove from the fire and keep aside.
For the jalebis- In a deep bowl add plain flour, ghee and eno, mix them using your fingertips.
- Gradually add water and make a smooth, lump free batter using your hands for mixing.
- Transfer the batter into a piping bag and cut a small tip or a thick cloth with a small hole in the center.
How to proceed- Heat oil or ghee in broad pan, and press out round swirls of the batter in the hot ghee working closely from center to the outside of the whirl [approximately 50 mm. (2 inch) diameter].
- Deep fry the jalebis till golden brown and transfer into the warm sugar syrup.
- Drain immediately and serve the instant jalebis hot garnished with almonds and pistachios.
- Do not allow the jalebi batter to overferment.
- Fry the jalebis immediately once the batter has rested for 10 minutes.
