This mouth-watering chole samosa chaat is an ever-popular roadside treat in Delhi, and you can find several vendors equipped with large, flat kadhais where the chole keeps simmering, ready to accompany crisp samose with snazzy toppings.
Notes on chole samosa chaat. 1. Instead of chole, you can also make the samosa chaat using ragda.
You can prepare the chole and the samose in advance, but remember to assemble the chole samosa chaat just before serving.

For the chole- Heat the oil in a deep non-stick pan, add the garlic paste, ginger paste and sauté on a medium flame for a few seconds.
- Add the tomatoes, mix well and cook on a medium flame for 4 to 5 minutes or till the tomatoes turn soft and mushy, while stirring occasionally.
- Add the green chilli paste, chole masala, black salt, chilli powder, dried mango powder, little salt and approx. 2 tbsp of water, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
- Add the chick peas and ¼ cup water, mix well and cook on a medium flame for 1 to 2 minutes while mashing it lightly using a potato masher.
- Divide the chole into 4 equal portions and keep aside.
How to proceed to make chole samosa chaat- To make chole samosa chaat, take 1 samosa, roughly break it into small pieces and place in a bowl.
- Put a portion of the prepared chole evenly over it.
- Pour 1 tbsp khajur imli ki chutney, 1½ tsp green chutney, ½ tsp red garlic chutney, 1 tbsp of onions and 1 tbsp of sev evenly over it.
- Finally sprinkle the coriander evenly on it.
- Repeat steps 1 to 4 to make 3 more plates of chole samosa chaat.
- Serve the chole samosa chaat immediately.

chaat recipes :

The assorted chutneys can be made a day prior and stored in the freezer. Before assembling, you can take spoonfuls of chutney, add water and adjust the consistency.

For making the samosa chole recipe, we will first make the masala chana. For that, wash and soak approx. 1 cup of kabuli chana overnight in a deep bowl.

In the morning, drain well using a strainer.

Transfer the soaked chana to a pressure cooker.

Add the salt and enough water.

Pressure cook it for 3 whistles over a medium flame. Allow the steam to escape naturally and then carefully open the lid.

Drain the boiled kabuli chana using a strainer and keep aside. You can reserve the water and use it will making the chole. You can keep the water aside and add later as per the recipe.

For the chole, heat the oil in a deep non-stick pan. Butter/ghee can also be used.

Add the garlic paste. Avoid adding if you are Jain.

Add the ginger paste.

Sauté on a medium flame for a few seconds or till the raw aroma goes away.

Add the tomatoes. To make it quickly, make use of tomato pulp instead.

Mix well and cook on a medium flame for 4 to 5 minutes or till the tomatoes turn soft and mushy, while stirring occasionally. You will also see some oil separating from the masala.

Add the green chilli paste. I prepare the paste using this recipe of and store in my freezer in advance.

Add the chole masala. Our recipe with detailed step by step photos will help you make a fresh aromatic chole spice mix at home.

Add the black salt. Add the chilli powder.

Add the dried mango powder. Lemon juice or chaat masala can be added for tang if you don’t have amchur.

Add little salt and approx. 2 tbsp of water.

Mix well and cook on a medium flame for 1 minute, while stirring occasionally. We have added salt while boiling the chana so, we will use it moderately this time.

Add the chickpeas and ¼ cup water.

Mix well and cook on a medium flame for 1 to 2 minutes. At this stage, you can use the reserved water from boiled chole.

Mash it lightly using a potato masher. This not only enhances the flavour but also thickens the chole gravy.

Switch off the flame and divide the chole into 4 equal portions and keep aside.

For preparing the chole samosa chaat | Delhi roadside chole samosa chaat | samosa chaat with chole | take 1 samosa. Warm them lightly in an oven or microwave.

Roughly break the samosa into small pieces and place in a bowl. Instead of chole, you can also make the samosa chaat using ragda. Refer our detailed recipe of Ragda Patties to make ragda at home.

Put a portion of the prepared chole evenly over it.

Pour 1 tbsp khajur imli ki chutney. You can also drizzle little whisked curd if you like before pouring the various chutneys.

Drizzle 1½ tsp green chutney.

Also, pour ½ tsp red garlic chutney. The quantity of chutney can be adjusted to suit your taste buds.

Sprinkle 1 tbsp of onions.

Also, sprinkle 1 tbsp of sev evenly over it.

Finally sprinkle the coriander evenly on it and our samosa chola is ready.
