For cheese balls- To make cheese balls, combine all the ingredients in a deep bowl along with approx. 2 tbsp of water and mix very well.

To prepare the mixture for cheese balls, in a deep bowl take grated processed cheese. Cheddar, Mozzarella cheese or a combination of cheese can also be used.

Add fresh bread crumbs. It not only absorbs excess moisture from the mixture but also helps in binding ingredients. There are many ways to prepare cheese balls but this one is the simplest.

Add cornflour.

Add plain flour. Both corn flour and plain flour help in making the cheesy balls crispy.

Add finely chopped green chillies. Green chilli paste, paprika powder or chilli flakes can also be used to provide a spicy kick to cheese balls.

Add finely chopped coriander. Additionally, you can add a myriad of finely chopped vegetables like capsicum, carrots, onions, bell peppers for a crunch and colour.

Add salt and freshly ground black pepper to taste. Add salt carefully as cheese already has salt in it.

Add approx. 2 tbsp of water and mix very well. Check the mixture for seasoning and add more salt or pepper as required.

To check if the oil is hot or not, drop a little mixture and if it comes up easily (after a few seconds) and you see small sizzling bubbles then the oil is ready to fry the cheese balls. If the mixture does not come up easily, the oil is not hot & if the mixture comes up quickly, the oil is more hot. So adjust the temperature accordingly to fry the cheese balls evenly.
