masala dal vada, also known as Paruppu Vada in South India, is a popular deep-fried snack made from a batter of ground chana dal (split chickpeas). The batter is seasoned with fennel, ginger, curry leaves and green chillies, then shaped into small patties and deep-fried until golden brown and crispy.
