Bread Pattice: A Healthy, Baked Indo-Chinese Delight

 

The Bread Pattice is a wonderfully innovative snack that transforms the familiar bread roll into a sophisticated, healthy treat. This recipe, similar in appearance to spring rolls and sometimes called Indo-Chinese Bread Cigars due to its flavour profile, is packed with the goodness of vegetables and soya. Unlike the traditional deep-fried version, this recipe features Baked Veg Bread Rolls, which are significantly healthier and achieve a wonderful crusty finish without excess oil. This makes the pattice a splendid grab-and-go snack that’s also great for kids.

 

Preparing the Nutrient-Rich Filling

 

The delicious filling is what sets this bread pattice apart. It begins with preparing the protein: soak the soya granules in enough warm water for 10 minutes, then drain and squeeze the water out completely and set them aside. The vegetables are added next. Heat the oil in a non-stick pan, then quickly sauté the spring onion whites and greens for 30 seconds. Add the bulkier vegetables—carrots, cabbage, and capsicum—and sauté for another 2 minutes to retain a slight crunch.

 

Infusing the Indo-Chinese Flavors

 

To achieve the signature Indo-Chinese flavor, the cooked vegetables are mixed with the proteins and sauces. Add the rehydrated soya granules and chopped boiled noodles to the pan and sauté for 1 more minute. The flavor punch comes from the sauces: add the readily available chilli-garlic sauce and tomato ketchup and sauté for just a few more seconds. Remove the mixture from the flame, then stir in the soy sauce and salt to taste for the final seasoning. The soya sauceprovides the essential umami depth.

 

 

Rolling and Sealing the Pattice

 

To create the perfect cigar shape, start by using fresh whole wheat bread slices. A handy tip is to use fresh bread for pleasing results, or to steam it for 2 minutes if it's slightly stale before rolling. Trim off the edges of the bread slice and roll the bread slice very thinly using a rolling pin. Place a tbsp of the stuffing on one end of the bread and roll it up tightly so as to seal the filling. The tight rolling is key to preventing the filling from escaping during baking. Repeat this process to make 11 more bread pattice.

 

Baking for the Crusty Finish

 

Once all the bread pattice are rolled, they are ready for baking. Brush a little melted butter on each bread pattice. This step aids in achieving that desirable crusty finish that mimics a fried roll without the deep-frying. Bake in a pre-heated oven at 200∘C (400∘F) for 10 to 12 minutes. Keep an eye on them until they turn a beautiful golden brown. The baking process is what makes these rolls significantly healthier than their fried counterparts.

 

Serving the Grab-and-Go Snack

 

After baking, cool the rolls slightly. For easier consumption, especially for children or as a cocktail snack, cut each roll into 2 equal pieces and serve immediately. For the filling
 

  1. Soak the soya granules in enough warm water for 10 minutes. Drain, squeeze the water and keep aside.
  2. Heat the oil in a non-stick pan, add the spring onion whites and greens and sauté on a medium flame for 30 seconds.
  3. Add the carrots, cabbage and capsicum and sauté on a medium flame for another 2 minutes.
  4. Add the soya granules and noodles and sauté on a medium flame for 1 more minute.
  5. Add the chilli-garlic sauce and tomato ketchup and sauté on a medium flame for few more seconds.
  6. Remove from the flame, add the soya sauce and salt and mix well. Keep aside.

How to proceed
 

  1. Place a bread slice on a flat dry surface and trim off the edges.
  2. Roll the bread slice very thinly using a rolling pin.
  3. Place a tbsp of the stuffing on one end of the bread and roll it up tightly so as to seal the filling.
  4. Repeat with the remaining ingredients to make 11 more bread pattice.
  5. Brush a little melted butter on each bread pattice and bake in a pre-heated oven at 200ºc (400ºf) for 10 to 12 minutes.
  6. Cool slightly, cut each roll into 2 equal pieces and and serve immediately.

Handy tip:
 

  1. Use fresh bread for this recipe. If it is a little stale, steam it for 2 minutes before rolling.

    1. To make bread pattice | first we need to soak the soy granules. Place 2 tbsp soy granules in a deep bowl.

    2. Pour enough warm water in it.

    3. Cover with a lid and allow them to soak for 10 minutes.

    4. Open the lid and squeeze the soy granules to remove the excess water and discard it. soaked soy granules are ready for bread pattice.

    1. Heat 1/2 tbsp oil in a non stick pan.

    2. Add 2 tbsp finely chopped spring onions whites.

    3. Add 2 tbsp finely chopped spring onion greens.

    4. Sauté on a medium flame for 30 seconds.

    5. Add 3 tbsp finely chopped carrot juliennes.

    6. Add 2 tbsp sliced cabbage.

    7. Add 3 tbsp sliced coloured capsicum.

    8. Sauté on a medium flame for another 2 minutes.

    9. Add the soaked soya granules.

    10. Add 2 tbsp chopped boiled noodles.

    11. Add 1/2 tbsp chilli-garlic sauce.

    12. Add 1/2 tbsp tomato ketchup.

    13. Add 1/2 tsp soy sauce.

    14. Add salt to taste. We added 1/8th tsp salt.

    15. Mix well. 

    16. Sauté on a medium flame for 1 1/2 minutes.

    17. Keep aside filling for bread pattice.

    1. Place a whole wheat bread slices on a flat dry rolling board and trim the edges off using a knife. Repeat for the remaining bread slices.

    2. Roll the bread slice very thinly using a rolling pin. Roll all the bread slices thinly.

    3. Place a 1 tbsp. of the stuffing on one end of the bread.

    4. Roll it up tightly. Make sure that the stuffing doesn’t fall off from the edges while you are rolling it.

    5. Apply some water at the edges and press gently to seal the stuffing.

    6. Repeat with the remaining ingredients to make 11 more bread pattice.

    7. Grease the baking tray well so that the baked bread rolls do not get stuck to the tray.

    8. Place the rolls on a greased baking tray.

    9. Brush a little melted butter on each bread pattice.

    10. Bake in a pre-heated oven at 200ºc (400ºf) for 10 to 12 minutes.

    11. Turn them over.

    12. Bake again at 200ºc (400ºf) for 5 more minutes so that they have an even color on all sides.

    13. After baking. Cool slightly.

    14. Cut each roll into 2 equal pieces.

EXCELLENT! A perfect finger food that `Rocks the Party`. Prepare all the pattice in advance & just bake10 minutes before serving. Not only children, even adults loved it. Children as well as elders don?t like soya but these `Bread Pattices `are so tasty that no body really knew the presence of soya. A very very big thanks to Ms Tarla Auntyji for a very healthy as well as tasty yummy Bread Pattice. We loved it! Thanks once again.

If we roll the bread, it breaks. What to do?

As mentioned in the handy tip, the bread used in this has to be extremely fresh or else it should be steamed for 2 minutes before rolling. Also do not put too much pressure while rolling.
