Ingredients
For The Rice
- 1 cup long grain rice (basmati chawal)
- 1 cup coconut milk (nariyal ka doodh)
- 4 tsp chopped coriander (dhania)
- 1 tsp salt
- 1 tsp oil
For The Vegetable Curry
- 1 cup broccoli , cut into florets
- 8 baby corn , sliced diagonally
- 2 tbsp red curry leaves (kadi patta) paste
- 1 tsp cornflour
- 1 cup coconut milk (nariyal ka doodh)
- 45659 pineapple , peeled , cored
- 2 tbsp lemon juice
- 2 tsp sugar
- 1 tbsp soy sauce
- 2 tsp lemon rind
- 2 tbsp oil
- salt to taste
For The Garnish
- 2 tbsp sliced onions , fried till brown
- 2 tbsp chopped spring onions

Just the aroma of coconut milk with red curry paste with some veggies is great.
