Ingredients

For Stuffed Onion Pakoda
4 small onions

To Be Mixed Into A Potato Stuffing
1 1/2 cups boiled and mashed potatoes
1/4 cup finely chopped onions
2 tbsp finely chopped coriander (dhania)
2 tsp ginger-garlic (adrak-lehsun) paste
1/2 tsp green chilli paste
1/4 tsp chilli powder
1/4 tsp chaat masala
1/2 tsp turmeric powder (haldi)
salt to taste

To Be Mixed Into A Batter (using 3/4 Cup Of Water)
1 cup besan (bengal gram flour)
2 tbsp rice flour (chawal ka atta)
1 tsp chilli powder
1/2 tsp turmeric powder (haldi)
1/4 tsp asafoetida (hing)
1 tbsp finely chopped coriander (dhania)
2 pinches baking soda
salt to taste
2 tbsp hot oil
Method

For stuffed onion pakoda

    For stuffed onion pakoda
  1. To make stuffed onion pakoda, peel and cut the onions into halves and separate each layer of onion halve. Keep aside.
  2. Divide the potato stuffing into 16 equal portions.
  3. Stuff a portion in one onion halve, cover it with another onion halve and press slightly to seal the stuffing.
  4. Heat the oil in a deep non-stcik pan, dip the potato stuffed onions into the besan batter one by one and deep fry in hot oil on a slow flame till they turn golden brown and crisp.
  5. Serve the stuffed onion pakoda immediately.

  2. Cut the bottom and top edge of each onion.
  3. Peel the skin off and discard it. 
  4. Cut each onion into two halves.
  5. Separate each layer of the onion halve. We need 32 onion shells in all to make 16 pakodas. Keep aside.

  7. Add 2 pinches baking soda and salt to taste.
  8. Add 1 tbsp hot oil. This helps to make the brinjal pakoda crispy. 
  9. Add 3/4 cup of water.
  10. Mix well using a whisk till no lumps remain. The batter has to be very smooth. Keep aside.
