This is a neat little Italian appetizer made of crispy bread, topped with crumbled ricotta cheese, colourful cherry tomatoes, aromatic herbs and tongue-tickling spices.

A brushing of olive oil makes it all the more appealing to the palate. Indeed, the Ricotta Cheese and Cherry Tomato Crostini, enjoyed with a bowl of hot soup, is sure to make you drool in anticipation of the coming meal!

Ingredients
1/4 cup crumbled ricotta cheese
1/4 cup cherry tomato halves
8 french bread slices
1 tsp olive oil for brushing
1 1/2 tsp olive oil
1/4 tsp dried mixed herbs
1/4 tsp dry red chilli flakes (paprika)
salt to taste
1/4 tsp sea salt for sprinkling
Method
    Method
  1. Place the French bread slices on a greased baking tray and apply a little olive oil on each bread slice.
  2. Bake in pre-heated oven at 200°c(400°f) for 15 minutes, or till they turn light brown. Cool completely.
  3. Combine the cherry tomato halves, olive oil, mixed herbs, chilli flakes and salt in a deep bowl and mix well.
  4. Place the toasted bread slices on a clean, dry surface and put a little of the ricotta cheese and spread it evenly.
  5. Put some cherry tomato mixture over each ricotta cheese layer and finally sprinkle a little sea salt evenly over it.
  6. Serve immediately.

Tarla Dalal    Hi Arushi, You can find ricotta cheese in any supermarket. You can substitute it with cream cheese.

You have mentioned in the first step as brush coconut oil, where as it should be olive oil. Request your kind self to please rectify the same.

crumbled ricotta cheese is a great cheese to use on any toast or crostini. Top with cherry tomato and sprinkled with sea salt makes a fab starter. How i love the sea salt as it makes all the difference.
