For the paneer tikka- Combine the paneer cubes, onion cubes, capsicum cubes and the marinade in a bowl and toss gently. Keep aside to marinate for 30 minutes.
- Heat a non-stick tava (griddle), grease it with oil and cook the marinated paneer-capsicum on a medium flame for 4 to 5 minutes. Keep aside.
How to proceed to make paneer tikka roll- Combine the onions rings with chaat masala in a bowl, mix well and keep aside.
- Place a roti on a clean dry surface and put 1/4th portion of the marinated paneer tikka on side of the roti.
- Arrange ¼ cup of onion rings over it and roll it up tightly.

Add 1 tbsp of oil to this. This makes the roti soft.

Also add the salt to taste. Increase or decrease the quantity of salt to your liking.

Slowly add water little by little.

Mix it well with your hands. Gather the flour from all sides and if its too floury, you will need more water.

Knead it into a soft dough for at least 2 minutes. We have used approximately 1/3 cup of water.

Apply a little oil on the surface of the dough so that it doesn’t become dry. Cover the dough with a wet muslin cloth. You can also use cling film or a plate to cover.

Keep aside for 15 minutes. Giving rest to the dough improves the texture and the rotis will be softer and fluffier.

Divide into 4 equal portions.

Take a portion of the dough between your palm, flatten it and place it on a rolling board.

Sprinke a little flour on your rolling board and roll out each portion of the dough into a thin circle of 225mm. (9”) diameter.

Heat a non-stick tava (griddle) on a high flame and place the roti on it. Reduce the flame when it becomes hot enough.

Cook till small blisters appear on the surface. Turn over the roti and cook for a few more seconds on a medium flame till light brown spots appear. Do not cook this on a slow flame, or else the roti will become too hard.

Cook the roti using 1/4 tsp of oil on each side.

Take the roti off the heat and repeat with the remaining dough portions to make 3 more rotis.

If you do not have thick curd, then take curd in a muslin cloth or a clean handkerchief, put it in a strainer and place over a bowl or hang it on a tap. Add the besan. Besan helps in binding and coating the spices well to the paneer and vegetable cubes while marinating. Also, besan absorbs the moisture from curd making the marinade thick and creamy.

Add the chaat masala. This can be substituted with lemon juice for tanginess.

Add the dried fenugreek leaves. Before adding, we have lightly toasted the kasuri methi in a pan and we will crush it between the palm and then add to get maximum flavours from it.

Add the garam masala.

Add salt to taste. Also, you can add a tsp of mustard oil for a unique flavour.

Whisk well and our paneer tikka marinade is ready. Taste it once so, you can adjust the flavours according to your preference.
