Ingredients

For Panch Dhan Khichdi
1 cup long grained rice (chawal) , washed and drained
2 tbsp moong (whole green gram) , soaked for 8 hours and drained
2 tbsp masoor (whole red lentil) , soaked for 8 hours and drained
2 tbsp matki (moath beans) , soaked for 8 hours and drained
2 tbsp rajma (kidney beans) , soaked for 8 hours and drained
2 tbsp kabuli chana (white chick peas) , soaked for 8 hours and drained
1 tbsp oil
3/4 cup finely chopped onions
1/2 tsp garam masala
1/2 tsp chilli powder
2 tsp coriander-cumin seeds (dhania-jeera) powder
1/2 tsp turmeric powder (haldi)
salt to taste

To Be Ground Into A Smooth Paste (using Approx. 1/4 Cup Water)
4 tbsp freshly grated coconut
2 tsp ginger-garlic (adrak-lehsun) paste
1/2 tbsp roughly chopped green chillies

For The Garnish
2 tbsp finely chopped coriander (dhania)

For Serving With Panch Dhan Khichdi

Method

  1. To make panch dhan khichdi, heat the oil in a pressure cooker, add the onions and sauté on a medium flame for 1 minute.
  2. Add the prepared paste, garam masala, chilli powder, coriander-cumin seeds powder, turmeric powder, salt and ¼ cup water, mix well and cook on a medium flame for 1 minute.
  3. Add all the pulses, rice and 4 cups water, mix well and pressure cook for 3 whistles.
  4. Allow the steam to escape before opening the lid.
  5. Garnish the panch dhan khichdi with coriander and serve hot with fresh curds.

  1. Khichdi is a staple food in our country. Generally, it is made with a combination of rice and lentils. You can substitute/mix and match to form a myriad of khichdi recipes using various dals, grains, pulses etc. The health quotient can be improved with the addition of vegetables and use of healthy grains like jowar, bajra, wheat etc. Khichdi is commonly known as sick man’s food because of it’s simple yet strength giving effect. Lehsun ki chutney, freshly chopped onions, papad, pickles, curd and kadhi are some popular accompaniments served with a khichdi. Below are some other healthy khichdi recipes : 

For the Fresh Masala Paste

  1. To make a fresh masala paste for the panch dhan khichdi recipe | 5 dal khichdi recipe | pregnancy khichdi | pressure cooker mixed dal khichdi | in a mixer jar, add freshly grated coconut. You can keep the skin intact for extra fibre.
  2. Add 2 tsp of ginger-garlic paste. If you don’t have the paste ready, add 2-3 cloves of garlic and half an inch of ginger.
  3. Add roughly chopped green chillies.
  4. Pour ¼ cup of water.
  5. Grind everything to make a smooth paste and keep aside.

Preparation for the Panch Dhan Khichdi

How to make Panch Dhan Khichdi

  1. Incase of the long grained rice, there is no need to soak for hours but, if you remember like half an hour prior then you put in that extra effort. To make the Panch Dhan Khichdi, clean and wash the basmati rice.
  2. Drain and keep aside.
  3. For making the Panch Dhan Khichdi, heat the oil in a pressure cooker. You can also use ghee for the tempering of the five grain khichdi. Traditionally, khichdis were made in clay pots or brass handi and slow cooked for a long duration.
  4. Once the oil is hot, add the onions and sauté on a medium flame for 1 minute.
  5. Add the prepared paste. It enhances the flavour of Panch Dhan Khichdi.
  6. Add the garam masala. I have used homemade garam masala powder.
  7. Add the chilli powder. To be adjusted as per your liking.
  8. Add the coriander-cumin seeds powder.
  9. Add the turmeric powder.
  10. Add salt and ¼ cup water.
  11. Mix well and cook on a medium flame for 1 minute.
  12. Add all the pulses. To make the Panchdhan Khichdi more nutritious, you can toss in some chopped vegetables.
  13. Add the rice. Brown rice, daliya, oats and buckwheat are some healthy alternatives.
  14. Add 4 cups water. Preferably use hot water to speed up the cooking process of the panch dhan khichdi.
  15. Mix well and pressure cook for 3 whistles. Depending upon your pressure cooker type and the consistency you prefer, you can pressure cook the Panch Dhan Khichdi for longer duration.
  16. Allow the steam to escape before opening the lid.

Simply delicious...this recipe is so quick and easy to make and also a great variety to the regular moong dal khichdi.. a perfectly heart melting dish...
