Palak Paratha is a quick and easy recipe to make consisting of palak, whole wheat flour, maida, ghee and green chilli paste. This popular Punjabi Palak Paratha can be made healthier with the removal of plain flour and increasing the whole wheat flour.

Palak contains large amounts of fibre along with a lot of essential vitamins and minerals. When puréed and combined with the flour imparts a lovely green colour Palak Paratha that's a treat for your eyes.

Notes on palak paratha: 1. Add the lemon juice. It enhances the taste of the Palak Paratha. Also, adding lemon juice which is rich in vitamin C will help in the absorption of Iron present in spinach. 2. Maida is often used for making paratha recipes because it makes a more flaky flatbread. But, if you wish to keep this palak paratha recipe healthy then skip adding maida and use 1½ cup of whole wheat flour. 3. Also, add the salt. Be cautious while adding salt because spinach is slighty salty in flavour. You can even add about 1 tbsp ghee at this stage to the dough. Ghee provides softness to the Palak Paratha. 4. Combine all the ingredients and knead to semi-soft dough using enough water. 5. Dip the dough portion in flour and dust of excess flour. Roll out into 150 mm. (6") diameter circle, using a little whole wheat flour for rolling. Do not use excess flour or else it will harden the palak paratha on cooking. You can roll the parathas in any desired shape. 6. Using 1 tsp of ghee, cook the Palak Paratha till brown spots appear on both the sides. Press the edges lightly with the help of flat spoon to ensure even cooking. You can even make use of butter or oil to roast the paratha.

Ingredients

For Palak Paratha
1 1/2 cups chopped spinach (palak)
1/2 tsp lemon juice
3/4 cup whole wheat flour (gehun ka atta)
3/4 cup plain flour (maida)
1 tsp green chilli paste
1 tbsp ghee
salt to taste
whole wheat flour (gehun ka atta) for rolling
8 tsp ghee for cooking

    For palak paratha
  1. To make palak paratha, combine the spinach, lemon juice and 2 tbsp of water in a mixer and blend to a smooth purée.
  2. Combine all the remaining ingredients including the spinach purée and knead to a semi-soft dough using enough water.
  3. Divide the dough into 8 equal portions and roll out each portion into 150 mm. (6") diameter circle, using a little whole wheat flour for rolling.
  4. Heat a non-stick tava (griddle) and cook each paratha on both sides, using 1 tsp ghee for each paratha, till brown spots appear on both the sides.
  5. Serve the palak parathas hot.

How to make Palak Paratha:

  1. For making the Palak Paratha (Spinach Paratha) recipe at home, firstly clean the spinach leaves. To make the palak paratha we are taking around 1 small bunch of spinach. Remove the hard stems of the spinach leaves by chopping them off and discard them. Place the spinach leaves in a colander/strainer and wash them under running water to get rid of excess dirt.
  2. Place the washed leaves on a chopping board and roughly chop the palak leaves.
  3. Transfer the chopped spinach to a mixer jar. 
  4. Add the lemon juice. It enhances the taste of the Palak Paratha. Also, adding lemon juice which is rich in Vitamin C will help in the absorption of Iron present in spinach.
  5. Add 2 tbsp of water.

  7. For making the dough of Palak Paratha, in a deep bowl, take whole wheat flour.
  8. To this, add refined flour. Maida is often used for making paratha recipes because it makes a more flaky flatbread. But, if you wish to keep this palak paratha recipe healthy then skip adding maida and use 1½ cup of whole wheat flour.
  9. Add green chilli paste for spice. Skip adding chilli paste if you are making this for kids.
  10. Add the prepared spinach puree. This freshly made puree provides a bright green colour to the palak paratha. But, if you are in haste and do not want to prepare the palak puree then you can directly add finely chopped spinach leaves to the flour.
  11. Also, add the salt. Be cautious while adding salt because spinach is slighty salty in flavour. You can even add about 1 tbsp ghee at this stage to the dough. Ghee provides softness to the Palak Paratha.
  12. Combine all the ingredients and knead to semi-soft dough using enough water. We have used around ⅓ cup of water.
  13. Divide the dough into 8 equal portions.
  14. Sprinkle a little flour on the rolling surface to prevent the Palak Paratha dough from sticking to it.
  15. Place a dough ball on the rolling surface and press it to flatten.
  16. Dip the dough portion in flour and dust of excess flour. Roll out into 150 mm. (6") diameter circle, using a little whole wheat flour for rolling. Do not use excess flour or else it will harden the palak paratha on cooking. You can roll the parathas in any desired shape.
  17. Heat a non-stick tava and cook the palak paratha on the bottom side, until bubbles appear on the surface of the palak paratha.
  18. Flip over and cook the other side.
  19. Using 1 tsp if  ghee, cook the Palak Paratha till brown spots appear on both the sides. Press the edges lightly with the help of flat spoon to ensure even cooking. You can even make use of butter or oil to roast the paratha.
  20. Remove on a plate and keep aside. Repeat steps 13 to 18 to make 7 more Palak Parathas (Punjabi Palak Parathas).

Healthy Palak Paratha with whole wheat flour:

  1. Take a deep bowl and add 1½ cup of whole wheat flour into it.
  2. Rest of the steps will remain same as the regular Palak Paratha (Spinach Paratha).

Spinach gives you the iron. Simple paratha to make. I tool the maida out and replaced with whole wheat flour to make a healthier paratha,
