moong dal uttapam is like no snack you have ever tasted before. A deliciously savoury batter of moong dal, curds and spices is topped with a peppy green peas mix and cooked on a tava till it turns an irresistible golden in colour.
This moong dal uttapam sumptuous snack is great to have for breakfast, but can be served at parties too. You can save time by preparing the topping the previous day itself.
The fibre (4.1 g in ¼ cup) present in yellow moong dal for moong dal uttapam prevents the deposition of bad cholesterol (LDL) in the arteries which promotes a healthy heart in turn and good for diabetics.

For the batter- Soak the dal for at least 2 to 3 hours and drain well.
- Combine the soaked dal, curds, green chillies and ¼ cup of water and blend in a mixer to a smooth paste.
- Add the salt, asafoetida, besan and baking powder and mix gently. Keep aside.
For the green peas topping- Heat the oil in a non-stick pan and add the cumin seeds.
- When the seeds crackle, add the green peas, salt and green chillies, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
- Add the dried mango powder and coriander and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.
How to proceed- To make moong dal uttapam heat a greased non-stick tava (griddle) and grease it using a little oil.
- Pour a spoonful of the batter on the tava (griddle) and spread in a circular motion to make a 100 mm. (4”) diameter circle. We poured 3 spoonfuls of batter on the tava at one time.
- Spread a little stuffing on it and press it gently.
- Cook on a slow flame for 1 to 2 minutes
- Turn it upside down and cook again for 1 to 2 minutes.
- Repeat with the remaining mixture and stuffing to make 6 more uttapams.
- Serve moong dal uttapam hot with green chutney and sweet chutney.
- Prepare green peas stuffing 1 day in advance.

This is what yellow moong dal looks like. Yellow moong dal refers to moong beans that have been skinned and split, so that they're flat, yellow, and quick-cooking. They're relatively easy to digest.

Put the yellow moong dal in water and wash it. You can see the dirt. This will require you to change the water 2 to 3 times till you get clean water.

Cover and soak the dal in warm water for at least 2 hours.

Add a pinch asafoetida (hing).

Add 1 tbsp besan (bengal gram flour).

Add 1/2 tsp baking powder.

Mix gently.

Batter for moong dal pancakes.

Heat 1 tbsp coconut oil or oil in a non-stick pan. The MCT in Coconut oil reduces the LDL cholesterol (bad cholesterol) while increasing the count of HDL cholesterol, maintaining normal blood pressure and good for diabetics.

Add 1 tsp cumin seeds (jeera).

Add 1 1/4 cups boiled and mashed green peas. Legumes like green peas, cow peas, mung, chick peas and kidney beans have a cholesterol lowering effect. Green Peas are rich in Vitamin K which aids in bone metabolism. Green peas have a Glycemic Index (GI) rank of 22 which is low and good for diabetics.

Add 1/4 cup grated carrot. Carrots relieve constipation, lower blood pressure, have fibre and lower cholesterol.

Add salt to taste. We added 1/2 tsp salt.

Add 1 tsp finely chopped green chillies.

Cook on a medium flame for 1 to 2 minutes, while stirring continuously.

Add 1 tsp dried mango powder (amchur).

Add 2 tbsp finely chopped coriander (dhania).

Cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.
