hen purchasing cauliflower, look for a clean, creamy white, compact head in which the florets are closely packed. Avoid spotted or dull coloured ones, especially those with brown blemishes. Look for cauliflowers with fresh green leaves, but make sure you chop off the leaves before you store them as there is a chance of worms remaining in the leaves, and even spreading to other items in the fridge!
