mam, what we can use instade of milk??? i want to keep khakhara for long term... also same time khakhara must be soft and crispy.. pls give me tips for this.. sandeep shah

Tarla Dalal    Hi Sandeep You can avoid the milk completely. USe water accordingly to knead the dough. To make crispy khakhras last for long time, cook them only on a slow flame till they are really crisp. Press the khakhra with the khakhra press uniformly so they cook evenly and then cool them completely. If they are not cooled well, they will turn soggy. Also store only in air tight container to maintain their crispness.

There''s no need of adding gram flour to it... It took away the original taste of khakhra... The simpler you keep it the better it tastes... Wheat flour, fenugreek leaves and salt kneaded with water taste awesome.
