I have been making potato stuff puff and plain puff..after cooling it remains crisp but next day it becomes soggy...how to avoid this in both stuffed puff and plain puff

Khari.. wow.. khari can be made it at home now.. little effort to put to make a perfect khari.. but it was worth it.. warm khari straight from the oven was the best.. in the first bite..
