I ask this qs for all three: green paste, green chilli paste and ginger-green chilli paste: Is there anyway to protect the rich green color? I often find that chutneys etc, develop a band of drakness at the endges. Do help. (Like, will adding a dash of lemon help?)

Tarla Dalal    Yes lemon juice definitely helps to maintain the green colour of chutney. So does salt also help. Even if you make ginger-green chilli paste, ensure to add little salt. When made fresh, for a few hours they maintain green colour. However any of these when stored in refrigerator for longer time will change the colour slightly.

I really appreciate this amazing recipie although it is hard to acquire 60 Chilli''s andwe aren''t feeding the community
