  1. To make carrot onion soup, heat the oil pressure cooker on a medium flame and when hot, add the onions and sauté on a medium flame for 2 minutes.
  2. Add the carrot, apple, little salt and 1½ cups of water, mix well and pressure cook for 3 whistles.
  3. Allow the steam to escape before opening the lid.
  4. Cool slightly and blend in a mixer till smooth.
  5. Transfer the mixture into a deep non-stick pan, add the mixed herbs, milk, ½ cup of water, salt and pepper powder, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  6. Serve the carrot onion soup hot.

Made slight adjustments: used both olive oil and butter to saut? the onions. Substituted 1 1/2 cups plain water for chicken stock when adding to the onions, carrots and apples. Lastly didn''t use a pressure cooker allowed it to simmer on low heat for about 30 mins. Other than these changes followed the recipe, & the taste was fantastic!!! Suprising how filling this turned out to be!

This soup is made without using any fat.It is a thick soup, I served it with sandwiches and my family really enjoyed it...Serve it piping hot.

I tried this recipe but the soup was very bitter in taste. I followed the recipe exactly used the same measurements and timings. But finally the soup was so bitter and was inedible.

Hi, We have tried this here and it was perfect, Don''t know what went wrong with your soup,just make sure your apple is not bad that could be the only possibility that the soup went bitter in taste.

Hi Krishta, If you do not have a pressure cooker, instead of pressure cooking it, you can cook it in a deep non-stick pan and cover it with a lid and cook.
