whole wheat bread made from whole wheat flour is healthier than its refined flour counterpart, also has a rustic aroma and flavour, which are thoroughly enjoyable. Freshly-baked 100% whole wheat bread is a delight to bite into, for babies, toddlers, children and adults too! You can use olive oil instead of butter to get a more authentic aroma , but if that is not available you can always bake atta bread with regular soft butter.

Ingredients


For Whole Wheat Bread
2 1/2 cups whole wheat flour (gehun ka atta)
1 tbsp instant dry yeast
2 tbsp sugar
3/4 tsp salt
2 tbsp olive oil or soft butter
whole wheat flour (gehun ka atta) for sprinkling
butter for brushing

Method

For whole wheat bread

  1. To make {span class="bold1"}whole wheat bread{/span}, combine the yeast, sugar and ¼ cup of warm water in a bowl, cover it with a lid and keep aside for 10 minutes.
  2. Combine the whole wheat flour, salt and yeast-sugar mixture in a deep bowl, mix well and knead into a soft dough using enough warm water.
  3. Add the olive oil and knead very well till the dough is smooth.
  4. Shape the dough into a proper round using both your hands while tucking the edges at the bottom.
  5. Cover it with a dry muslin cloth and keep aside in a warm place for 45 minutes or till the dough is double in size.
  6. Sprinkle the whole wheat flour over a smooth, flat surface, place the dough over it and knead it very well using both your hands. If the dough is getting sticky while kneading, then sprinkle little whole wheat flour as required.
  7. Tap the dough with your fingers and spread it to make a 250mm. X 200 mm. (10” x 8”) diameter oval shape.
  8. Roll the dough to make a 200 mm. (8”) long cylindrical roll and place it in a greased bread loaf tin. Cover it with a dry muslin cloth and again keep aside in a warm place for 30 minutes.
  9. Bake it in a pre-heated oven at 200°c (400°f) for 10 minutes.
  10. Lower the temperature to 180°c (360°f) and bake it for 30 minutes.
  11. Brush the the {span class="bold1"}whole wheat bread loaf{/span} with butter and keep aside to cool slightly.
  12. Once the the {span class="bold1"}whole wheat bread loaf{/span} is slightly cooled, de-mould it and keep aside to cool completely.
  13. Once the {span class="bold1"}whole wheat bread loaf{/span} has cooled completely, cut it into 13 mm. ( ½“) bread slices.
  14. Serve or use the {span class="bold1"}whole wheat bread{/span} as required.

Tried the whole wheat bread and it was very delicious and soft. Is it advisable to cut up all the slices when hot and fresh? Seemed more crumbly when I tried cutting after some time. Loved the homemade fresh bread, that too totally ''whole wheat'' Thank you very much for this easy and nutritious recipe.

Tarla Dalal    Hi, Thank you for the feedback, it is advisable to cut the bread when it has cooled down completely. if you are going to cut while warm or hot it is surely going to crumble.

Hi , i tried this bread and the outcome was superb. Only thing is that the taste was a bit on sweet. Can we reduce the amount of sugar to balance the taste . Thanks for sharing such a easy and wonderful recipe

Hi tarla mam, Am a big fan of yours. Thank you for sharing such an awesome healthy bread recipe. I tried it out yesterday and the taste was good but i had 2 issues with it. Am new for baking and it''s my first time making bread i used active dry yeast instead of instant yeast. The bread''s crust was very crunchy but the inner portion was soft. It got dried very soon. I wanted to feed this to my 11months old baby. Please help me how to make the crust a little soft and how to store the bread and prevent drying soon. I rolled it with a cling film but it got dry. I applied butter over the top of the bread. I followed everything you said in the recipe. Please advice.

Tarla Dalal    Hi, Use instant dry yeast because that gives a better texture to the bread. Secondly bread making is an art and will come with practice so dont worry and thirdly always apply butter as soon as it is baked it will make it soft, the top will always be a little harder compare to the inside.
