Ingredients

For Rice and Moong Dal Idli
1/2 cup rice (chawal)
1/2 cup green moong dal (split green gram)
1/4 cup urad dal (split black lentils)
1/4 tsp fenugreek (methi) seeds
salt to taste

Method

For rice and moong dal idli

    For rice and moong dal idli
  1. To make rice and moong dal idli, soak the rice and green moong dal in a deep bowl with enough water for 2 hours.
  2. Soak the urad dal and fenugreek seeds in a deep bowl with enough water for 2 hours.
  3. Drain the rice and green moong dal mixture and blend in a mixer using approx. ½ cup of water till smooth.
  4. Drain the urad dal-fenugreek seeds in a mixer using approx. 5 tbsp of water till smooth.
  5. Transfer both the mixtures into a deep bowl, add the salt and mix very well.
  6. Cover with a lid and keep aside to ferment for 8 hours. Once fermented mix it very well.
  7. Put a little batter into each greased idli mould and steam in a steamer for 10 to 12 minutes or till the idlis are cooked.
  8. Cool the rice and moong dal idli slightly, demould and serve immediately with sambhar and chutney.

For making the rice and green gram idli

  1. For making the rice and green gram idli, put the rice in a deep bowl.

  4. Remove the bad water and add new fresh water.
  5. Cover it with a lid and keep aside to soak for 2 hours.
  6. Take a bowl, add the urad dal.
  7. Add the fenugreek seeds.
  8. Wash it well in water.
  9. Remove the bad water and add new fresh water.
  10. Cover it with a lid and keep aside to soak for 2 hours.
  11. Drain the rice- green moong dal mixture by passing through a strainer.
  12. Drain the urad dal-fenugreek by passing through a strainer.
  13. Place the rice and green moong dal in a mixer.
  14. Add ½ cup water.
  15. Blend till smooth.
  16. Transfer the mixture into a deep bowl.
  17. Put the urad dal-fenugreek in a mixer.
  18. Add approx. 5 tbsp of water.
  19. Blend till smooth.
  20. Transfer the mixture into the same bowl as the rice and green moong dal mixture.
  21. Add salt.
  22. Mix it very well.
  23. Cover with a lid and keep aside to ferment for atleast 8 hours.
  24. Once fermented mix it very well.
  25. Put the water to boil in an idli steamer or a pressure cooker. Grease the idli moulds with little oil.
  26. Put a little batter into each greased idli mould. Do not over fill with batter as the idlis will puff up after steaming and you do not want to create a mess.
  27. Steam in a steamer for 10 to 12 minutes on a medium flame or till the rice and green gram idlis are cooked.
  28. Insert a toothpick or knife in the center to check whether the rice and moong dal idlis have cooked.
  29. Cool slightly and demould. For demolding the vegetable moong dal idli easily, apply a little oil to the knife or dip a spoon in water and remove the idli hassle free.
  30. Serve the rice and moong dal idli immediately with sambhar and chutney.

Tarla Dalal    Just before steaming you can add Eno to the batter if you wish to. Add 1 to 2 tbsp of warm water on it. As soon as bubbles form, mix the batter gently.

Idly did not come out properly although I soaked overnight and before putting in idly maker added eno but still took so long and even then it didn''t cook from inside

Is this a soft diet for typhoid patient?

Tarla Dalal    As soft diet for a typhoid patient at first instance should include foods like banana, boiled rice, baked potato, boiled eggs, stewed or baked apple etc. When there is no fever, you can include other fruits and boiled vegetables too. Once you can digest these foods you can move to a recovery diet which an include this rice and moong dal idli to make up for your protein requirement.

Tarla Dalal    You can avoid the fruit salt, but the idli might turn a little hard. In this case you need to serve it to your child immediately after cooking. Or use a pinch of fruit salt instead of 1 tsp.
