A ‘potage’ is a thick soup, in this case made with potatoes. It is topped with an assortment of vegetables and cream, making this recipe visually, nutritionally and gastronomically appealing.

Ingredients

For The Soup
1 1/2 tbsp butter
1 1/2 cups peeled and sliced potatoes
1 1/2 cups sliced onions
1 1/2 cups milk
1 bayleaf (tejpatta)
salt and freshly ground black pepper powder to taste

For The Vegetable Topping
1/2 tbsp butter
1/4 cup carrot , cut into thin juliennes
1/4 cup onions , cut into thin juliennes
1/4 cup french beans , cut into thin juliennes
1/4 cup broccoli florets

For The Garnish
2 1/2 tbsp fresh cream
Method

For the soup

    For the soup
  1. Put the butter in a microwave safe bowl and microwave on high for 20 seconds.
  2. Add the potatoes and onions, mix well and microwave on high 4 minutes, stirring once in between after 2 minutes.
  3. Add the milk, 1¾ cups of water, bay leaf, salt and pepper mix well and microwave on high for 5 minutes, stirring once in between after 3 minutes. Remove and discard the bay leaf and keep aside to cool slightly.
  4. Blend the mixture in a mixer to a smooth purée, transfer it back to the same microwave safe bowl and microwave on high for 2 minutes, stirring once in between after 1 minute. Keep aside.

  1. Put the butter in a microwave safe bowl and microwave on high for 15 seconds.
  2. Add all the vegetables, mix well and microwave on high for 2 minutes.

How to serve

    How to serve
  1. Just before serving, top the soup with the vegetable topping, garnish with fresh cream and serve immediately.

Tips
  1. Serve hot.
