For paneer and vegetable appe- To make paneer and vegetable appe, in a deep bowl, add dosa batter, capsicum, paneer, onions, coriander, green chillies and salt and mix well. Keep aside.
- In small non-stick pan, heat oil and add mustard seeds, sesame seeds and curry leaves and sauté on a medium flame for a few seconds.
- Pour the tempering over the batter and mix well.
- Heat the appe mould on a medium flame and grease it using little oil.
- Pour approx. ½ tbsp of the batter into each of the 7 moulds.
- Cover with a lid and cook for 2 minutes.
- Apply little oil and turn over and cook on another side for 2 minutes or till they turn golden brown in colour on the lower surface.
- Repeat steps 4 to 7 to make 14 more appes in 2 more batches.
- Serve paneer and vegetable appe immediately with green chutney and tomato ketchup.
