An enticingly spicy-sweet pancake made of a quick-mix rice flour batter sweetened with jaggery and spiced up with green chilli paste. Jaggery, which has a more rustic flavour, colour and aroma than white sugar lends the Jaggery Pancakes an intense aroma on cooking, which is sure to draw everybody to the table like bees to honey!
Recipe Description for Jaggery Pancakes
- To make {span class="bold1"}jaggery pancakes{/span}, we will first heat water in a pan, add jaggery, boil and stir to make jaggery water.
- Make a batter by putting rice flour and jaggery water in a bowl. Whisk well to break all lumps.
- Add green chilli paste, salt and mix well.
- Heat a non-stick mini uttapam pan and grease it with little oil. Pour a spoonful of batter in each uttapa mould to make a 75 mm. (3") diameter round.
- Cook on a medium flame on one side for 30 seconds and brush the top with oil. Flip over and cook the other side the same way. Cook till they turn golden brown in colour from both sides.
- Serve {span class="bold1"}jaggery pancakes{/span} immediately.
