Tips to make instant palak dosa: 1. You can store the batter in an air tight container in the fridge and use it with in a day. 2. Grease the tava each time you make dosa. 3. You need to adjust the consistency of water as the batter tends to settle down after making few dosas.

For instant palak dosa- To make instant palak dosa, in a deep bowl, add rice flour, semolina, spinach puree, ginger garlic paste, green chilli paste, salt to taste and 3 cups water.
- Mix well to make a lump free runny batter.
- Heat a non-stick tava (griddle), grease it using oil and sprinkle a little water on it. It should sizzle immediately. Wipe it with a muslin cloth.
- Once the tava is greased properly, pour the batter using a ladle from the edges to the centre in a circular motion to make a round dosa.
- Put 1 tsp oil evenly over the dosa and cook the dosa on medium flame for 3 to 4 minutes or till crisp.
- Flip the dosa and cook on medium flame for a minute till crispy.
- Fold it into a semi-circle or a triangle and remove in a serving plate.
- Repeat with the remaining batter to make 9 more dosas.
- Serve the instant palak dosa immediately with coconut chutney and sambhar.
