These homemade fried cinnamon sugar doughnuts are the ultimate old fashion sugar treats. Light and fluffy, yet soft and sweet on the inside. Deep-fried until golden then dusted liberally with a delicious mixture of cinnamon and sugar is delite to have in every bite.
Tips to make instant doughnuts: 1. Do not roll or knead the dough too much, as the aeration in the dough will go away and doughnuts will become chewy. 2.Deep-fry the doughnuts on a slow flame so that it gets evenly cooked from inside. 3. You can also apply chocolate ganache over the doughnuts. 4. Make sure to use fresh curd which is on room temperature.

For instant eggless doughnuts- To make instant eggless doughnuts, in a deep bowl, add plain flour, curd, sugar, baking powder and baking soda and mix well.
- Add milk and knead into a dough. Cover with a lid and keep aside for 1 hour.
- Divide the dough into 2 equal portions. Roll each portion slightly thick into 175 mm. (7”) diameter circle using little plain flour for rolling.
- Cut the doughnuts using a doughnut cutter or the cookie cutter, take a smaller cutter to make a small hole in the centre.
- Remove the excess dough and repeat steps to make remaining 13 more doughnuts.
- Heat oil in a deep pan, deep fry few doughnuts at a time on slow flame till golden brown in colour.
- Drain on an absorbent paper. Cool slightly.
- In another bowl, combine castor sugar and cinnamon powder and mix well.
- Coat each doughnut in cinnamon sugar mixture and serve the eggless doughnuts immediately.
