Cheese and herb potato fries, let your child indulge occasionally in this cheesy version of french fries topped with flavoursome mixed herbs. Though it makes a great snack, avoid packing it as a main meal.
Method- Combine the butter, olive oil, cornflour, garlic, oregano, rosemary, pepper and salt in a bowl.
- Add the potatoes, toss well till they are coated from all the sides and keep aside to marinate for at least 10 to 12 minutes.
- Place the potatoes in a greased baking tray in a single layer and bake in a pre-heated oven at 200°c (400°f) for 20 to 25 minutes or till the potatoes are cooked and crisp, turning once in between.
- Sprinkle the processed cheese evenly on top, toss well using a spoon and bake for another 3 to 4 minutes.

Cheese and herb potato fries made from 3 cups potato fingers (unpeeled), 1/2 tsp dried oregano, 1/2 tsp dried rosemary, 2 tbsp melted butter, , 1 tbsp olive oil, 2 tsp cornflour, 1 tsp grated garlic (lehsun) , optional, 1/2 tsp freshly ground black pepper (kalimirch), salt to taste and 4 tbsp grated processed cheese. For the herb mixture, add 2 tbsp melted butter in a bowl.

Add 1 tbsp olive oil.

Add 2 tsp cornflour. Both olive oil and cornflour are added to bind the spices and coat the potato fingers well.

Add 1 tsp grated garlic (lehsun) , optional.

Add 1/2 tsp dried oregano.

Add 1/2 tsp dried rosemary.

Add 1/2 tsp freshly ground black pepper (kalimirch).

Add salt to taste.

Potato fingers are referred to thin long strips of potato, which are of approx. 1/2" thickness. To make potato fingers, wash a big potato very well to remove all dirt as we are not going to peel the skin.

Place the potato on a chopping board horizontally and cut it into medium sized slices vertically using a sharp knife. You will get approx. 5 to 6 slices.

Separate out the slices as shown.

From each slice cut approximately 4 fingers. Using a sharp knife. We have used 3 big sized potatoes ot get 3 cups potato fingers.

Toss well till they are coated from all the sides.

Keep aside to marinate for at least 10 to 12 minutes.

Grease a baking tray with 1/4 tsp butter.

Place the potatoes on the greased baking tray in a single layer.

Bake in a pre-heated oven at 200°C (400°F) for 45 minutes or till the potatoes are cooked and light brown, turning once in between.

Sprinkle 4 tbsp grated processed cheese evenly on top.

Bake for another 5 minutes or till the cheese melts.

Cut the potatoes into fingers just before making the fries as they tend to discolour with time due to oxidation.

Dried oregano and rosemary can be replaced with dried mixed herbs.

Serve them immediately to avoid them from turning soggy.

Use melted butter in the recipe and not soft butter as melted butter sticks well to the potatoes.
