  1. Sieve the plain flour, baking powder and salt in a deep bowl and keep aside.
  2. Combine the butter, brown sugar and powdered sugar in a deep bowl and mix well using a spatula till light and fluffy.
  3. Add the egg, vanilla essence and plain flour mixture and mix well.
  4. Add the caramel sauce and mix well to form a thick mixture.
  5. Line the baking tray with butter paper and with the help of an ice-cream scooper, scoop out 13 equal portions and place it on the baking tray at regular intervals.
  6. Bake it in a pre-heated oven at 180°c (360°f) for 10 minutes.
  7. Remove the tray from the oven and put 3 gems over each cookie and bake them again at 180°c (360°f) for 7 to 8 minutes.
  8. Allow it to cool completely.
  9. Store in an air-tight container and use as required.

Caramel Cookies.. the taste of caramel is just too good.. its not very crispy but soft from the center and the gems gives a nice chocolaty taste.I liked this recipe.. enjoyed this with hot cup of tea..
