Ingredients

For The Spinach Sauce
1 cup chopped spinach (palak)
2 tbsp butter
2 tbsp plain flour (maida)
2 cups milk
salt and to taste

Other Ingredients
2 cups mixed boiled vegetables
(french beans , carrot ,
green peas and cauliflower)
salt and to taste
1 tbsp fresh cream
1/4 cup grated processed cheese
Method

For the spinach sauce

    For the spinach sauce
  1. Pour ¼ cup of water in a kadhai, allow it to boil.
  2. Add the spinach and sauté on a high flame for 1½ minutes or till the spinach is soft.
  3. Remove from the flame, allow it to cool and blend in a mixer to a smooth purée. Keep aside.
  4. Heat the butter in a broad non-stick pan, add the plain flour and sauté on a medium flame for 1 to 2 minutes, while stirring continuously.
  5. Add the milk, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
  6. Add the salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
  7. Add the spinach purée, mix well and cook on a medium flame for 1 minute, while stirring continuously.
  8. Switch off the flame, add the pepper powder and mix well.

  1. Combine the prepared spinach sauce, boiled vegetables, salt, pepper and cream, mix well and cook on a medium flame for 1 t o2 minutes, while stirring occasionally.
  2. Pour in a 175 mm. (7") baking dish and sprinkle the cheese all over and bake in a pre-heated oven at 180 °c (360 °f) for 10 to 15 minutes.
  3. Serve immediately.

What is baked vegetables in spinach sauce made of?

  3. While making spinach sauce, after adding the plain flour remember to sauté continuously to avoid lump formation. 

How to select spinach

  1. Choose spinach that has vibrant deep green leaves and stems with no signs of yellowing. 
  2. The leaves should look fresh and tender, and not be wilted or bruised. 
  3. Avoid those that have a slimy coating as this is an indication of decay.
  4. Also check for dirt especially in between the thick stems. 

How to make spinach puree

  1. To make spinach puree, pour ¼ cup of water in a kadhai and allow it to boil.

  6. Add salt to taste.

  8. Add the prepared spinach purée.
  9. Mix well and cook on a medium flame for 1 minute, while stirring continuously.

For the mixed vegetables

  1. For the mixed vegetables, you can boil each vegetable separately or boil them together in one deep pan. We need 2 cups mixed boiled vegetables (french beans, carrotgreen peas and cauliflower) in all. First we need 1/2 cup diagonally cut and boiled French bean.
  2. Then we need 1/2 cup boiled green peas.
  3. We also need 1/2 cup boiled cauliflower florets. 
  4. We also need 1/2 cup diagonally cut and boiled carrots. 

For the mixed vegetables in spinach sauce

You could add your fav cheese blend and make Mac n cheese using this sauce. I usually make the sauce with cornstarch. For people who like gluten free. Thank you this one sounds and looks really good

I was surprised how ‘non’ Indian this dish was, incorporating a roux and cheese. So when I cooked the spinach for the purée, I added some garlic and ginger, red onion, coriander powder, a bit of cardamom, and Garam masala to give it a Vedic flair. In the oven now.

baked vegetables in spinach sauce.. this recipe is so creamy and cheesy with loads of vegetables added.. the colour of the dish tempts to try atleast a spoonfull of this. it is perfectly baked.. served it best with garlicy bread.. with some more of extra cheese.

Tasty dish, but can do without baking. Just make the sauce a bit thick and pour it over the boiled veggies. CB

Tasty dish, but I feel there is little need to bake it. Tastes just as good by pouring the sauce on boiled veggies.
