For Mexican Rice
- To make Mexican rice, heat the oil in a pan.
 - Add the chopped onion and fry for 2 minutes.
 - Stir in the ginger-garlic paste and fry for another 1 minute.
 - Add the boiled mixed vegetables, cooked rajma (kidney beans), and boiled sweet corn.
 - Cook for 2 minutes on medium heat, stirring frequently to prevent burning.
 - Stir in the tomato puree, a pinch of sugar, Kashmiri red chili powder, and salt to taste. Mix well to combine.
 - Add the cooked long-grain Basmati rice and the chopped spring onion whites and greens.
 - Mix everything well.
 - Continue cooking on medium heat for 2 more minutes, allowing the flavors to meld.
