A truly nourishing subzi is what I would describe this recipe as. The steamed koftas are made with the goodness of soy flour along with the iron rich ragi flour for binding. The addition of coriander paste in the tomato gravy also adds more iron along with lending the fresh herb taste to it.

Simple spinach turned flavourful with the addition of just ginger, garlic and green chillies. The mushrooms give a good mouth feel while adding a good dose of protein.

The curd curry is the highlight of this recipe. It tastes too good. Moreover the non-fried spinach dumplings are flavourful too. I will surely try this recipe again.

Brinjal and methi is a famous combo.... what made me try this recipe is the use of the unusual masala powder and to my surprise this subzi turned out to be fabulous. The health quotient of this subzi is also high.... it's rich in iron and calcium along with being low in calories.

A sneak way of making white gravy with onion and low fat milk.... So health without the unnecessary wealth of fat from cashews which usually goes in making the white gravy...also the oil used is very less in this subzi. So cent percent marks to this subzi...

A very unusual gravy but tastes awesome!! The veggies in the red capsicum gravy are also exotic, so would say this is truly a party fare - the healthy way with loads of nutrients.

A nice way to add calcium and protein rich curds to fibre rich cluster beans. I liked this twist to the gavarfali rather than the sukhi gavarfali we usually make.
