Ingredients

For The Stir Fry
4 garlic cloves , thinly sliced
2 tsp grated ginger (adrak)
1/2 tsp dry red chilli flakes (paprika)
3 tbsp sesame (til) oil
500 gms mushrooms , quartered
1/4 cup shitake mushrooms , soaked in warm water
1/2 cup snow peas , stringed
4 spring onions , chopped

To Be Mixed and Whisked Together For The Glaze
3 tbsp vegetable stock
1 1/2 tsp honey
1/2 tsp soy sauce

For The Sauce
1/2 cup vegetable stock
4 tsp soy sauce
1 tbsp honey
1 1/2 tsp vinegar
1 tbsp corn flour mixed with vegetable stock
Method
    Method
  1. Heat 1 tbsp of oil in a wok over high heat.
  2. Add both the mushrooms and toss.
  3. Allow the mushrooms to cook for a few minutes until they start to release water.
  4. Add the glaze and bring to boil, stirring occasionally.
  5. When barely any more liquid remains take the mushrooms off the heat and set them aside in a bowl.
  6. In the same wok heat the remaining 2 tbsp oil and add the garlic, ginger, and chilli flakes and cook until fragrant.
  7. Add the snow peas and green onions and toss for about 30 more seconds.
  8. Make the sauce by whisking together the , soy sauce, honey, rice vinegar, cooking wine or sherry, and the corn starch in a bowl and set that aside as well.
  9. Increase heat to high, add the soy sauce, honey, vinegar, stock and corn flour slurry and allow the mixture to come to a boil. The sauce will thicken considerably.
  10. Add the mushrooms back to the mixture and cook for about 20 more seconds.
  11. Take off the heat.
  12. Serve over rice and garnish with spring onion greens.
