Ingredients

For Veg Crispy
3 cups mixed vegetable strips (capsicum , cauliflower and baby corn)
oil for deep-frying
1 tbsp oil
1 tbsp finely chopped garlic (lehsun)
1/2 cup chopped spring onions (whites and greens)
salt to taste
3 tbsp schezwan sauce

To Be Mixed Together Into A Thick Batter (using Approx. 1/2 Cup Of Water)
1/2 cup cornflour
1/2 cup plain flour (maida)
1 tsp ginger-garlic (adrak-lehsun) paste
1/2 tsp freshly ground black pepper (kalimirch)
1 tsp lemon juice
salt to taste
Method

For veg crispy

    For veg crispy
  1. To make veg crispy, heat the oil in a deep non-stick pan. Dip each vegetable strip into the batter and deep-fry in hot oil, a few at a time, till they turn golden brown in colour from all the sides. Drain on an absorbent paper. Keep these deep-fried vegetables aside.
  2. Heat the oil in a non-stick kadhai or a broad non-stick pan on a high flame till it smokes.
  3. Add the garlic and sauté on a high flame for few seconds.
  4. Add the spring onions and salt and sauté on a high flame for 1 minute.
  5. Add the schezwan sauce and cook on a high flame for 30 seconds, while stirring continuously.
  6. Add the fried vegetables and toss gently.
  7. Serve the veg crispy immediately.

  4. Add freshly ground black pepper.
  5. Add lemon juice.
  6. Add salt to taste.
  7. Combine all the ingredients and gradually add water to form a thick coating consistency batter. 
  8. We have used approx. ½ cup of water to make a smooth, lump-free batter. 

How to make Chinese veg crispy

  1. To prepare Indo-Chinese crispy fried vegetables, heat the oil in a deep non-stick pan. 
  2. Dip each vegetable strip into the batter.
  3. Carefully drop the vegetables one by one in the hot oil.
  4. Deep-fry till they turn golden brown in colour from all the sides.
  5. Using a slotted spoon drain the vegetables on an absorbent paper. 
  6. Follow the same procedure for the remaining vegetables.  Keep these deep-fried vegetables aside.
  7. To make veg crispy, heat the oil in a non-stick kadhai or a broad non-stick pan on a high flame till it smokes. 
  8. Add the garlic and sauté on a high flame for few seconds.
  9. Add the spring onions.
  10. Add salt and sauté on a high flame for 1 minute.

I don''t know why my veg crispy does not remain crisp after 5 mins of cooking. Please help

Tarla Dalal    Hi, Make sure while frying the veggies, the temperature of the oil is not to high, if its high, it will get crispy but will become soft immediately. To keep it crispy for the longer time, fry them on a medium flame and keep turning them, to get crispy from all the sides.
